Sea urchins were of no historical interest as a food fishery in America until the last decades of the twentieth century, when they were fished commercially for a high-value, global market, most going to Japanese buyers for use in sushi. Urchins are gathered by diving. Because there is no regulation of the numbers taken, the sea urchin population has been seriously depleted.
