Burgoo is a thick stew that originated in Kentucky and Tennessee during the nineteenth century but quickly spread throughout the South and Southwest. It could contain almost any combination of meats and vegetables. Squirrel, wild turkey, pigeons, and fish were frequently ingredients, and the vegetables might include tomatoes, celery, turnips, and corn.
