Frank X. Tolbert (1912–1984) was a Dallas newspaperman who wrote about Texas history and folklore and, by finding that the subject of regional foods produced the most response, produced a classic book and was instrumental in the vogue for chili con carne and chili contests across the United States.

Tolbert had noticed by the late 1950s that columns about old-time food and cowboys drew the most reader mail, and went national in the 24 November 1962 The Saturday Evening Post with the article, “A Bowl of Fire Called Chili.” When Texas-born Lyndon Johnson became president of the United States a year later, his wife received so many requests for the family chili recipe—some inspired by Tolbert’s article—that she printed up a recipe card for Pedernales Chili.
