The wine cellar is where wine is often stored by the producer, the merchant, or the consumer. In all cases the desire is the same: to allow the wine to mature and to protect it from deterioration. Cellars, or wine storage areas, can be traced to the ancient world, where it became known that the aging of some wines would bring about positive changes. Cellars were often just that, below-ground areas, but since the twentieth century they may be any area where it is possible to control temperature, humidity, light, and vibration.
