During the 1990s wraps became a popular new form of sandwich in the United States. Flour tortillas, plain or flavored, or various flatbreads are used as a base on which imaginative pairings of ingredients, often reflecting international cuisines, such as Asian, Latin American, or Mediterranean, are layered. Fillings typically include very thinly sliced meats and cheese, and greens like spinach, basil, or cilantro. Onion, roasted red pepper, avocado, or hot peppers, along with a variety of flavored dressings, provide additional taste. The tortilla or flatbread is then folded in at one or both ends and rolled up from one edge. Wraps originated in northern California, based on the concept of the burrito, which utilizes a flour tortilla in the same fashion to hold various combinations of Tex-Mex food.
