I always have bananas at my place. Green bananas are good for savoury dishes, but most of all I like the sweet ones, whether for a refreshing smoothie (see page 25), baked and served with passion fruit, mashed up in my Banana and Chocolate Chip Cake, or slightly caramelised in my Roast Banana Ice Cream. It’s a real utility fruit. And then, of course, you can always use the skin to slip somebody up! Look out for Caribbean bananas in the shops - they are nice and sweet - and quite a few are Fairtrade these days.
