‘Bleugh!’ is what I used to think about garlic, but it is an essential ingredient. I love kissing, but not with garlic breath! I cook with garlic all the time and have evolved a way to tame the beast, which you can adopt for the recipes in this book. If you put the cloves into a dish whole, or cut them into bigger pieces, you get a more subtle fragrance. If you cut garlic up too small, it can overpower the other flavours in a dish.
