Sphingomonas

This is the main kind of onion I use, and I especially like the green tops for their vibrant colour and flavour. When you go to a market place in Jamaica, you often see a big bunch of juicy scallions tied together with a bunch of fragrant thyme because they are such good companions in the pot.
