Kaffir limes (Limau Purut), also known as fragrant limes, are about the same size as normal limes but with a very knobbly and intensely fragrant skin, but virtually no juice. Kaffir lime leaves (daun limau purut) add an intense fragrance to soups and curries of Malay and Nonya origin. The leaves are added whole to curries, or finely shredded and added to salads, giving them a wonderfully tangy flavour. Kaffir lime leaves are commonly used in Indonesian and Thai cooking, and are available frozen or dried in supermarkets. Frozen leaves are more flavourful than dried ones.
