Chinese broccoli is not like Western broccoli. It is very crunchy and slightly bitter and resembles Swiss chard in flavour; it is quite delicious with an earthy, green taste. It has deep olive-green leaves and sometimes white flowers. It is usually only available at Chinese shops but is well worth the search. If you can find it, look for stems that are firm and leaves that look fresh and green. Chinese broccoli is prepared in exactly the same way as Western broccoli and should be stored in a plastic bag in the vegetable compartment of the refrigerator where it will keep for several days. If you cannot find Chinese broccoli, substitute ordinary broccoli.
