Shanghai bok choy is the small, light green miniature version of the commonly available Chinese bok choy or white cabbage. It has grown in popularity in Hong Kong due to the large Shanghainese population. It can, on occasion, be found in some Chinese shops. Ordinary bok choy can be substituted.
