Dried ginger or dried galangal is a member of the ginger family and is used by the Chinese for medicinal as well as culinary purposes. In Hong Kong, it is used in braised meat dishes, especially exotic โ€˜gameโ€™ dishes to counteract the strong odour of the meat. It can be found in many Chinese and Asian markets and often comes in plastic or cellophane bags. Keep it in a jar at room temperature and it will last indefinitely.
