Dried ginger or dried galangal is a member of the ginger family and is used by the Chinese for medicinal as well as culinary purposes. In Hong Kong, it is used in braised meat dishes, especially exotic โgameโ dishes to counteract the strong odour of the meat. It can be found in many Chinese and Asian markets and often comes in plastic or cellophane bags. Keep it in a jar at room temperature and it will last indefinitely.
