In Hong Kong you will see whole preserved Yunnan or Jinhua hams in many food shops. Such ham is a popular staple, used as seasoning or as an ingredient in many Hong Kong dishes. Unfortunately, it is not obtainable here. Parma ham or Westphalian smoked ham are acceptable substitutes for these wonderfully rich, smoky-flavoured Chinese hams.
