These tiny leaf like, dried black fungi are also known as cloud ears because, when soaked, they look like little clouds. Soak the dried fungus in hot water for twenty to thirty minutes until soft. Rinse them well. Cut away any hard portions. Fungi are valued for their crunchy texture and slightly smoky flavour. You can find them in Chinese shops usually wrapped in plastic or cellophane bags. They keep indefinitely in a jar stored in a cool, dry place.
