These fungi are the larger variety of the above-described fungus. Prepare and soak them in the same manner. Rinse them well. Once soaked, they will swell up to four or five times their size. Rinse well and cut away any hard portions. Sold in Chinese shops, they keep indefinitely when stored in a cool, dry place.
