This amber-coloured oil is made from roasted sesame seeds and has a strong nutlike flavour and aroma. It is widely used in Hong Kong cooking in limited amounts as a final seasoning or in marinades but not normally as a cooking oil with other oils, as it is in northern China. As a final seasoning, it is added to subtly enrich a dish without overwhelming its basic flavour. Dark sesame oil is sold in bottles in many supermarkets and in Chinese shops.
