Preserved mustard greens are light green Chinese mustard greens which have been preserved in a brine of water, salt and sugar. In Hong Kong, they are eaten by themselves, or stir-fried or braised with meat. They have a wonderful, sweet and sour taste which contrasts nicely with meat. They can be found in tins or in vacuum-packed plastic bags and are widely available in Chinese shops. Once the tin is opened, put the greens in a jar and they will keep indefinitely in the refrigerator.
