Chilli sauce is a bright red hot sauce that is made from chillies, vinegar, sugar and salt. It is sometimes used for cooking, but more frequently in Hong Kong as a dipping sauce. There are various brands available in many supermarkets and Chinese markets, and you should experiment with them until you find the one you like best. If you find it too strong, dilute it with hot water. Do not confuse this sauce with the chilli bean sauce.
