This rich, thick, creamy brown paste is made from toasted sesame seeds and is used in both hot and cold dishes; it is particularly popular in northern and western China but is used on a limited basis also in Hong Kong. It is sold in jars at Chinese shops. If the paste has separated in the jar, empty the contents into a blender or food processor and mix well. If you cannot obtain Chinese sesame paste use a smooth peanut butter instead, but do not confuse it with Middle Eastern tahini.
