Along with bird’s nests, shark’s fin is the other exotic delicacy of Hong Kong, so important that it is now a multi-billion dollar business with every important restaurant in Hong Kong offering it, often with a long list of cooking styles to choose from. A symbol of extravagance, to which Hong Kong is no stranger, it can be extremely expensive. Shark’s fin is found in many dry-food shops in Hong Kong. The fin refers to the dorsal ‘comb fin’ or the two ventral fins of any of a variety of shark; indeed, in Hong Kong, shark’s fins are imported from all over the world.
