Smaller varieties of snow peas are found in the Hong Kong markets than are generally sold in the West. But like the ones in Hong Kong, this familiar vegetable combines a tender, crisp texture and a sweet, fresh flavour. In Hong Kong, snow peas are simply stir-fried with a little oil and salt and scraps of garlic and ginger. Frequently, they are combined with meats. Snow peas are often available at supermarkets. Look for pods that are firm with very small peas, which means they are tender and young. They keep for at least a week in the vegetable compartment of the refrigerator.
