As the name implies, this is light in colour, but it is full of flavour, saltier than dark soy sauce, and the best to use for most marinating and cooking. Light soy sauce is known in Chinese shops as Light Soy Sauce, Thin Soy Sauce or Superior Soy. This type of soy sauce is used extensively in Hong Kong.
