This is the process by which food is cut into thin, fine, matchstick-like shreds. First cut the food into slices and then pile several slices on top of one another and cut them lengthwise into fine strips.
To shred raw meat or poultry easily, first place the meat in the freezer for about twenty minutes or until it is firm to the touch. Then cut it, against the grain, into slices and shred.

Cooked foods such as the Steeped Chicken with Spicy Sauce are also shredded. Here, the texture of the dish is enhanced by the chicken being hand-shredded, rather than with a cleaver or knife. Although it is coarser, hand-shredded food holds the sauce better.
