How to Skin a Cooked Fish for Presentation

Make sure you place the fish on a clean flat surface before beginning
  1. Score the fish along its back, from head to tail.

  1. Peel the skin down to the belly and remove. Leave the skin on the head intact. Carefully turn the fish and repeat on the second side.
