A braising pan made of copper, cast iron, ceramic or stainless steel. The French manufacturer Le Creuset makes the most popular braisières of cast iron, although there are several manufacturers throughout Europe. Most cast-iron braising pans are enamelled and, while expensive, will last a lifetime if they are looked after: never heat the pan without some oil, fat or food in it; and do not scour - simply soak for a few hours before washing if heavily soiled.
