A spirit distilled from cider and then aged in oak barrels. After distillation it is clear and harshly alcoholic, but storage in oak develops the bouquet, mellows the flavour and changes the colour to a rich amber. Calvados is widely used in the cooking of the Normandy region of France in particular.
