This web-like membrane has thin lines of fat running in all directions that melt during cooking to form a sticky, almost invisible coat to hold the mixture in shape. As well as providing a protective coating during cooking, the fat in caul adds flavour. Pork caul fat is available from most good butchers, although pre-ordering is advisable.
