This fortified wine, originating from the island of the same name, exhibits sweet, dry and nutty flavours with a characteristic toasty nature that makes it a wonderful addition to sauces and charcuterie. My favourite is called Sercial, and is the driest of all, but an economical and pleasant alternative is the Australian ‘Premium Fine Old Malmsey’, produced by R.L. Buller & Son.
