Preheat the oven to 180°C. Butter a plate with a little soft butter and season with salt and pepper and break 1 or 2 eggs on top. Season only the white with freshly ground white pepper and transfer to the oven for about 5 minutes until just set. Before serving, clean the edges around the egg with moistened kitchen paper and dust the egg with finely chopped parsley.
