Pheasants are handsome-looking birds and very delicious to eat. The quality of farmed birds varies considerably, so a little trial and error may be involved. While their flavour is gamey, there is an underlying delicacy that calls for simple saucing, such as beurre noisette - butter that has been cooked to a nut-brown colour and sharpened with a little lemon juice.
