Some sugars, such as dark brown, light brown, muscovado, Demerara, and piloncillo, have very distinct flavors. These flavors have to do with the amount of molasses contained in each one. They are listed in the previous sentence from the smallest to largest amount of molasses contained in each sugar. (Light and dark brown sugar are essentially the same product, except for the color.) Molasses contains moisture, so this is an important factor to consider when formulating a recipe with one of these ingredients.
