This is a light and creamy frozen mousse, made using one of two methods:
  • A mixture of egg yolks, milk, sugar, whipped cream, and flavoring.
  • A mixture based on sugar syrup plus puréed fresh fruit and whipped cream called a frozen fruit mousse (mousse glacée aux fruits).
