A British specialty, this is an unrefined sugar with a strong flavor that comes from the sugar cane juice from which it is made. Also known as moist sugar, its coarse crystals are stickier in texture than American brown sugars. Although it has a strong molasses flavor, this does not result from the addition of molasses. It is, rather, a natural result of the production process.
