Pizza is a thin, flat round of yeast dough covered with a variety of toppings and baked. Pizzas are eaten in Italy as a snack or as a light meal. Tradition suggests that pizza as we know it originated on the streets of Naples sometime after the tomato was accepted into use in Italy. (Campania was the first region in Italy to use tomatoes and the region’s volcanic soil proved to be an excellent medium for growing varieties such as the DOP-rated San Marzano tomato.) Before then, pizza would have been a simple flatbread seasoned with salt and oil. Pizza is now made throughout Italy—styles differing by region—and throughout the world.
