Rare (al sangue) meat is red, and the center is cool or room temperature.
Medium-rare (media al sangue) meat is still red, but the center is slightly warm.
Medium (media) meat has a pink and warm center.
Medium-well (media ben cotta) meat has a center with a little color, perhaps a bit of pink.
Well-done (ben cotta) meat has no color. The steak may also be butterflied.
