Mutton is the meat from sheep older than one year. Generally, mutton is less tender than lamb and has a much stronger flavor.

In the U.S. industry, lambs begin feeding on grass or coarse grain during weaning, according to the USDA’s Food Safety and Inspection Service. As adolescents, they are fed hay and a feed mixture of corn, barley, milo, and/or vitamin-enriched wheat until maturity.
