Salts, including the salts naturally found in milk, change the electrical makeup of egg protein and speed up coagulation. According to Harold McGee (On Food and Cooking), with the addition of salt and other minerals, positively charged ions cluster around the negatively charged egg proteins, creating a neutralizing shield. This shield makes it possible for the proteins to unfold near each other and bond extensively.
