Several regions in Italy are famous for their production of sea or mineral salt, notably Emilia-Romagna (in the province of Cervia on the Adriatic) and Sicilia (Trapani, Paceco, and Marsala). At The International Culinary Center, coarse (kosher) salt is always used.
