Anchovy - a small fish, the main diet of Mediterranean-caught tuna. When the anchovies ‘run’ the fishermen know the tuna will follow. Anchovies are mostly salted and preserved, but you can also get lovely ones in olive oil. Italy, Spain and France are the best producers and Ortiz anchovies from Spain are considered the best of all.
