Five-spice - a Chinese / Cantonese spice mixture made from ground star anise, fennel seeds, cloves, Sichuan pepper and cinnamon (or cassia bark). There are several versions but this is the most authentic. Itโ€™s said to represent the five basic flavours of Chinese cuisine: sweet, sour, bitter, pungent and salty.
