Five-spice - a Chinese / Cantonese spice mixture made from ground star anise, fennel seeds, cloves, Sichuan pepper and cinnamon (or cassia bark). There are several versions but this is the most authentic. It’s said to represent the five basic flavours of Chinese cuisine: sweet, sour, bitter, pungent and salty.
