Manchego - a firm pasteurised ewe’s (sheep’s) milk cheese from La Mancha. Probably the most famous of all Spanish cheeses - it’s often compared to Italian Pecorino. It has a black-grey or buff-coloured rind with a cross-hatch pattern on the rind - which comes from the baskets these cheeses were traditionally made in.
