Pandan - the pandanus ‘tree’, from South East Asia and Northern Australia, has spiky leaves that impart a subtle green colour and distinctive taste used in both savoury and sweet preparations. Typically Thai in character. Known as the ‘vanilla’ of South-East Asia, not because of its flavour but because of the way and extent to which it is used.
