Polenta - a ‘meal’ made by grinding dried corn or maize. Italian in origin, it is cooked into a porridge by whisking into boiling stock, water, and sometimes even milk. Usually served as a savoury item either as a thick paste, or left to cool, then sliced, grilled or fried.
