Because game is a lean meat it needs to be cooked with care. It is also variable. No two wild birds or animals will have had exactly the same diet or exercise, or be the same age. If you are inexperienced at buying game, search out a good game dealer, (often the fishmonger) someone who can give you the background on the bird or beast you are buying. It is crucial to know young from old in order to choose the best cooking method. The game should also be properly hung so it will be as tender and flavourful as is required. The birds are hung unplucked and undrawn by a cord from their necks, separated from each other, in an airy, cool, dry place free from flies. A time guide is given for each bird in the various introductions of this book.
