A marinade of wine, olive oil and aromatics helps to tenderize tougher braising meat. It also helps flavour the meat and for this reason is useful with farmed game. Wild rabbit is often soaked for 12 hours or overnight in water with added vinegar - 1 tablespoon vinegar to 1 litre (1¾ pints) of water.
