Plucking

Pluck outdoors or in a draught-free room and hold the birds inside a large plastic refuse bag. Pull the feathers off starting at the breast, then move on to the sides, back, legs and wings, pulling against the way they lie. Hold the skin taut and when you come to the quills pull these out in the direction of their growth.
