If a crust’s edge appears to be darkening too much during baking before the filling is done, a pie crust shield will protect the edges. Inexpensive pie crust shields are available at culinary retailers, home goods stores, and most all-purpose stores. Some crafty bakers also construct their own out of aluminum foil. For a homemade ten-inch pie crust shield, cut aluminum foil into a circle fourteen inches in diameter. Then cut out a six-inch circle in the middle.
