A Reminder about Flour and Nut Meal

Remember to observe the absorbency of flour and nut meal in the dough. Take note of the unbaked dough’s consistency and the texture of the baked cookies. If cookies are consistently too dense or tough, cut back on the flour or nut meal amounts, a little at a time as needed. If dough is consistently too loose, increase flour or nut meal amounts, a little at a time as needed.

For cookie recipes, measure the flour un-sifted and fill the cup scantly. To get the scant measure, dip out a cup of flour and then shake off some of the flour so the cup measures somewhere between three-fourths full and full to the rim.
