Roasting nut meal and nut flour gives a deeper flavor. Heat a skillet over medium to medium-high. Add the meal or flour into the skillet and flatten it down with a spatula. Stir and flip the meal or flour regularly, for about five minutes, so it toasts evenly. If smoke starts to develop, the skillet is too hot. If that happens, remove from heat for a brief time and continue stirring, then return to heat as needed, with the temperature reduced as needed. Aim for golden brown, not dark brown. If the meal or flour darkens too much, it will become bitter. Know that nut flour is finer than nut meal and can burn easier.
