When I want an egg to have a little more structure, like when I am going to grate or devil it, I cook it this way: Place eggs in a medium pot, covered with 2 to 3 inches (5 to 7.5 cm) of water. Bring the water to a boil over medium-high heat. Turn off the heat, cover the pot, and set a timer for 12 minutes. Grab a medium bowl of ice water while the eggs are bathing in the hot water. When the timer goes off, scoop the eggs into the cold water to stop the cooking.
